As with Gumbos, which we’re told by some New Orleans friends, means Okra, this Gumbo has plenty of it- along with every likable vegetable in the garden of ‘healthy, fresh, nourishing, and yum yum good!’, if you like Pork Intestines-seasoned well. Since Tittle became the first Black woman to clean & cook ‘Chits’ on TV, she has taken the Pig to a whole new level with her renditions of how many ways to enjoy this unique delicacy-and never getting boarded with just fixing them the Afro-American way-which are prepared by boiling for hours until tender, and done.
