#101 – Tittle’s Spin On The Cornish Hen

Tittle’s spicy jerk Cornish Hen with Bread (dressing) stuffing.  Spinach and Veggies on top!

Fresh Cornish hen rinsed thoroughly.   

Spread Jerk sauce inside cavity & under skin of breast.   Season with Garlic powder, Cajun, and Tarjin seasonings.  Sprinkle extra virgin coconut oil over hen.  

Let marinate over night for thorough flavoring.  Or, while you’re preparing your veggies to cover your hen.  When ready to cook, add the stuffings.  

Stuff cavity  with bread, veggies, your choice,  more choices available on my site and Cookbook, coming soon.   Above is with a traditional bread dressing.  

Cut veggies, yellow, red onions, green, red, yellow, red peppers. Spread over hen.  Sprinkle more seasoning over veggies and cover tightly with foil.  

During last half hour-check on hen and add fresh Spinach.  Wrap back up and finish two hour of cooking.   If hen needs more time another 1/2 hour is good.  

Preheat over to 375-400.  Cook for two hours, or until hen is tender and you can gently pull off leg!  Hen will be very juicy and tender.  If hen is not falling off the bone, cook for 1/2 hour more.
